Creating something together
There are various ways a developer is able to learn: Being taught, reading books, watching videos … and by doing it. Of course you can do so with collegues of the same agency. But then you’ll be missing out the fresh ideas that others might be bringing in. A multi-agency hackathon is the right answer.

Topics?
Any topic could be picked up to work upon: A certain PR towards the Shopware core, an open issue, some dev extension that you have meaning to create for some time. And the recommended way to do this is by working together: Peer programming (perhaps by using JetBrains Code With Me), group brainstorm, buddying, you name it. The idea is to have fun with others and to learn something from it.
